Pumpkin Chocolate Chip Cookies

Introduction:

I liked the softness of these cookies. They were a hit with my youngest, who sometimes doesn’t like “veggies” in his cookies. You don’t need a mixer for these; they can be hand mixed easily.

Ingredients:

1 cup pumpkin puree

1 cup granulated sugar

1/2 cup vegetable oil

1 large egg

1 tbspn vanilla extract

2 cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1 1/2 tsp pumpkin pie spice (see notes below)

1/2 tsp salt

3/4 cup chocolate chips

Instructions:

1. To make pumpkin pie spice, combine 3 tbspn ground cinnamon; 2 tbspn ground ginger; 1 tbspn ground cloves; 1 1/2 tsp ground nutmeg; 1 tsp allspice

2. Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a baking mat.

3. In a medium bowl, combine the pumpkin, sugar, oil, vanilla and egg. Mix until smooth. Stir in the chocolate chips.

4. In a large bowl, add the flour, baking powder, baking soda, cinnamon, pumpkin spice and salt. Whisk this until it is well mixed.

5. Add the pumpkin mixture to the dry ingredients. Stir gently until just combined, do not over mix.

6. Drop by spoonfuls about 2 inches apart onto the prepared baking sheet. Place a few chocolate chips onto the top of each cookie.

7. Bake for 10-13 minutes or until a toothpick inserted into the center of the cookie comes out clean. If the center is still uncooked return them to the oven for 1-2 more minutes.

8. Remove them from the oven and let them cool in the pan for 5-10 minutes before transferring them to a cooling rack.
