Chicken Parmiagiana

Introduction:

Easy and tasty dinner to make.

Ingredients:

2 eggs, beaten

1/4 cup dry bread crumbs

4 boneless skinless chicken breast halves.

16 oz jar of spaghetti sauce

1/4 lb shredded mozzarella cheese

1/2 cupĀ  grated Parmesan cheese

Instructions:

1. Preheat oven to 350 degrees F/175 degree C. Lightly grease a medium baking sheet.

2. Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg and then into the bread crumbs. Place coated chicken on the baking sheet and bake in the preheated oven for 40 minutes., or until no longer pink and juices run clear.

3. Pour 1/2 of the spaghetti sauce into a 7 x11 inch baking dish. Place chicken over the sauce and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheese on top and return to preheated oven for 20 minutes.

Comments:

Another recipe I made a few changes to. First of all, I didn’t follow the measurements exactly. I used only one egg and estimated the number of breadcrumbs I’d use for my five pieces of boneless chicken. I also added some spice to the breadcrumbs: garlic powder, salt, onion powder, oregano, Parmesan cheese. The original recipe called for a jar of sauce to be used for two chicken breasts. Even though I used more chicken, I still only used one jar of sauce. Despite this, there was still enough sauce to go with the rice I served with it. If you were serving it with pasta, I might use more than one jar of sauce with the large quantity of chicken.

Lastly, the recipe implies that two baking trays are used. I used my 9×12 glass pyrex pan for both steps. I simply removed the chicken onto a cutting board at the 40 minute mark, added the sauce to the dish and put the chicken back in.

Roasted Garlic Cauliflower

Introduction:

I don’t make cauliflower very often, so when I do it’s usually plain. We were having company one evening, so I wanted something a bit fancier. I found this Roasted Garlic recipe online. It turned out to be a simple way to dress up the cauliflower.

Ingredients:

2 tablespoons minced garlic

3 tablespoons olive oil

1 large head of cauliflower, separated into florets

1/3 cup grated Parmesan cheese

salt and black pepper to taste

Instructions:

1. Preheat oven to 450 degrees F. Grease a large casserole dish.

2. Place the olive oil and garlic in a large resealable bag. Add cauliflower and shake to mix. Pour into the prepared casserole dish and season with salt and pepper to taste.

3. Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and broil for 3 to 5 minutes, until golden brown.

Comments:

A note on the baking temperature: Several comments on the recipe website mentioned turning down the heat to 400 degrees F. I was making this dish alongside a meat dish that cooked at only 350 degrees F, so I put it in four about 30 minutes longer than indicated above. It turned out fine.
